As urban populations continue to rise, innovators are looking beyond traditional farming as a way to feed everyone while having less impact on our land and water resources. Vertical farming is one solution that's been implemented around the world. Vertical farms produce crops in stacked layers, often in controlled environments such as those built by AeroFarms in Newark, New Jersey. AeroFarms grows a variety of leafy salad greens using a process called "aeroponics," which relies on air and mist. AeroFarms' crops are grown entirely indoors using a reusable cloth medium made from recycled plastics. In the absence of sun exposure, the company uses LED lights that expose plants to only certain types of spectrum. AeroFarms claims it uses 95% less water than a traditional farm thanks to its specially designed root misting system. And it is now building out a new 70,000 square foot facility in a former steel mill. Once completed, it's expected to grow 2 million pounds of greens per year, making it the largest indoor vertical farm in the world.

This video is not mentioning something really important. If they are not using soil, what are they using to feed/provide nutrients to the plants? Remember, good soil is important because it feeds the plant to actually sprout nutritious and better tasting leaves. You can't JUST HAVE water. Just like humans can't just drink water and survive. I'm pretty sure they are using chemically made liquid nutrients and fertilizer.

I just don't trust plants growing in plastic. Plastic has shown to release estrogen and hormones into our drinks and now the organic food will grow in recycled plastic? That's even worse.

Also I wanted to add that people who have a low income and live in the US can even use food stamps to buy organic seeds. When you buy organic micro greens they can be quite expensive, but grow them from seeds and they cost next to nothing. :)

What do you do with the soil after harvesting a batch? Can you keep reusing it without adding with compost or fertilizer? Do you have to sift out the roots before reusing it?

Hi! The arugula we use doesn't take any longer than broccoli, instead it's the first seed to sprout and one of the easiest. Just try different varieties. It tastes delicious and does very well with red cabbage or broccoli on the plate. Same texture but lighter green and the specific but concentrated arrugula taste. A little on the hot side. Very healthy too.

Are you using special micro-green seeds or normal gardening seeds?
I read that gardening seeds are laced with poison in order to increase shelf life and should not be used for micro-greens.

There may be a lot of protein in meat, but that doesnt mean that it doesnt exist anywhere else. In fact, vegans simply do what cows, pigs, sheep and chickens do; we go to the source – plants. Legumes (beans, peanuts, peas, lentils and soy), seitan and quinoa are the best sources of protein, and youll also find it in green vegetables (kale, broccoli, seaweed, peas and spinach), grains (brown rice, whole wheat bread and pasta, quinoa, bulgar) and nuts (brazils, peanuts, cashews, almonds, pistachios and walnuts).
Getting enough protein in your diet is not a big a deal. Simply be aware of what plant based foods are protein-rich, and try to include some in all your meals. Here are a few meal ideas that would give you one serving of legumes, for example:

Lentil Soup/Bolognese/Shepherds Pie

Quinoa Salad/Burger

It is worth noting that it is high-calorie and high-protein foods that give you that full feeling. Simply removing animal products from a standard diet could leave you with mostly low-calorie foods such as salads, vegetables, and fruit. Eating only these foods could quickly leave you feeling hungry and weak. Some people make this mistake and then feel that being vegan is a challenge.
Many animal products are actually 50% fat. Removing these can drastically reduce your fat intake (especially saturated fat), which can be hugely beneficial, especially if you have high cholesterol. Make sure, however, that you are getting adequate plant fats in your diet these are the good fats and essential for health. Sources of plant fats include nuts, seeds, avocado, and olives.
