Also I wanted to add that people who have a low income and live in the US can even use food stamps to buy organic seeds. The arugula we use doesn't take any longer than broccoli, instead it's the first seed to sprout and one of the easiest. Just try different varieties. It tastes delicious and does very well with red cabbage or broccoli on the plate. Same texture but lighter green and the specific but concentrated arrugula taste. A little on the hot side.
